From squid skin a valuable food supplement

From squid skin a valuable food supplement – The Kamchatka State Technical University (Russia) has recently opened a new frontier in the food industry: a food supplement made from squid skin.

This innovative creation, called KalmaKS, was conceived by recent graduate Alexander Samokhin. The project aims to transform the often undervalued squid skin into a biologically valuable and versatile ingredient.

A visionary project

It all stems from the project ‘Development of technologies for the production of food fortificants from commercial squid species’, which was designed to reduce waste from processing squid skin. The cutting-edge technology has been patented and is based on a sustainable and environmentally friendly approach.

KalmaKS: a concentrate of nutrients

Thanks to its high content of complete proteins, collagen, omega-3 and omega-6 polyunsaturated fatty acids, as well as minerals such as selenium and iodine, KalmaKS is a multi-component fortificant. Its versatility makes it suitable for increasing the biological value of various foodstuffs. Furthermore, as a supplement it can contribute to the body’s rapid adaptation to stress, making it interesting for sports enthusiasts.

Positive environmental impact

A distinctive feature of the project is its environmentally friendly approach. The production technology of ‘KalmaKS’ requires no expensive equipment or chemical components, making it cost-effective and sustainable.

Revolutionary crackers

To confirm the effectiveness of this innovation, experimental crackers were produced using the KalmaKS additive. It has been so successful that a patent application has already been filed to protect the method of preparing these crackers, paving the way for a new market of enriched and sustainable food products.

The Kamchatka State Technical University’s initiative is a bold step towards the intelligent use of marine resources, offering a new horizon for the food industry and promoting more sustainable practices.
